Chicken Liver with Capers, Balsamic & Parsley

Serves 2 | Time: ~20 minutes

Ingredients

  • 250–300g chicken livers, trimmed

  • 1 large onion, sliced

  • 2 cloves garlic, finely chopped

  • 1–2 tbsp capers, drained

  • 1–2 tsp balsamic vinegar (go light)

  • Small handful fresh parsley, chopped

  • 1–2 tbsp plain flour

  • Pinch of cayenne pepper

  • Salt & black pepper

  • Butter + a little olive oil

  • Optional: squeeze of lemon (to finish)

Method

1. Prep the livers

Pat the livers dry. Lightly toss in flour, salt, and a pinch of cayenne.

(You’re aiming for a thin coating, not heavy dredging.)

2. Cook the onions

Heat butter and a splash of olive oil in a pan over medium heat.

Add the onions with a pinch of salt and cook for 10–12 minutes until soft and slightly golden.

Push to one side of the pan.

3. Cook the livers (fast and hot)

Turn the heat up. Add a bit more butter if needed.

Place livers in the pan in a single layer.

Cook for about 90 seconds per side.

They should be browned outside but still slightly soft inside.

4. Build the flavour

Add the garlic and cook for 20–30 seconds (don’t let it brown).

Add the capers.

Splash in the balsamic vinegar and let it bubble briefly, scraping the pan.

5. Finish

Return onions to the pan and toss everything together.

Add chopped parsley.

Taste and adjust seasoning.

Optional: finish with a small squeeze of lemon if it needs sharpening.

Notes (worth paying attention to)

  • Don’t overcook the livers—they go tough and chalky quickly

  • Go easy on the balsamic—it should lift, not dominate

  • The onions provide balance—don’t rush them

Outcome:

Soft, rich livers with sharp, salty hits from capers and a light sweet-acid finish from the balsamic. Something you can actually repeat, not just endure.
