Maple Berry Eggy Bread

A simple, satisfying breakfast that combines protein, fibre and healthy fats to keep you fuelled for the day.

Ingredients

  • 2 slices rye and mixed seed bread (or farmhouse batch white if preferred)

  • 2–3 eggs

  • 5g butter

  • A pinch of cinnamon (optional)

  • 100g mixed berries

  • 2–3 tablespoons Coconut Collab Natural yoghurt

  • 1 teaspoon pure maple syrup

Method

  1. Beat the eggs with the cinnamon.

  2. Dip each slice of bread into the egg mixture, coating both sides.

  3. Melt the butter in a frying pan over a medium heat.

  4. Cook the bread for 2–3 minutes on each side until golden brown.

  5. Serve topped with the mixed berries, Coconut Collab Natural yoghurt and a drizzle of maple syrup.

Coach’s Tip

If you’re looking to increase your protein intake, use 3 eggs instead of 2 or enjoy this breakfast alongside a pea protein shake. It’s an excellent choice after a resistance training session or as a balanced breakfast to support energy throughout the morning.
